Many of my guests have asked me how long miso lasts. So today, I am going to write about best-before date of miso.
I myself cook miso soup almost everyday for my family of four and use up a pack of miso within a month. So I've never paid much attention to the BB date. And I looked into some websites of major miso manufactures in Japan and here are the findings.
So, how long can miso last ? The answer is, miso can stay edible forever ! Miso is a fermented food and the fermentation keeps going as time goes by but it never goes bad. It might get harder by losing moisture and the color might get darker as sugar and amino acid in miso reacts each other, called Maillard reaction, but it is still edible. However, miso that was opened long time ago and exposed to the air for long tends to lose its nice flavor and every manufacture I checked recommends to use it up within the stated BB date.
What is the best way to keep miso ? Heat and air are enemies of miso. So cover the surface of miso with a plastic wrap and then put a lid on to minimize contact with the air. You can keep miso either in a fridge or a freezer. Due to the salt it contains, it doesn't freeze.

1 tablespoon of miso
2 tablespoon of mayonnaise
vegetable sticks - you can use whatever vegetable you like but my favorites are daikon radish and cucumber cut into thin sticks.
Mix miso and mayo well, dip vegetable sticks and eat ! Easy !!
