I had two gentlemen from Belgium today and cooked tempura.
They were very keen to know the basics of Japanese cuisine. I think knowing basics is very important in doing anything. You can go offbeat only when you know the beat.
Many questions about whys and hows and I think I didn't fail to answer ;)
